Mediterranean Farfalle Pasta

Ingredients:

  • 1 pound Farfallebowtie pasta (#310888)
  • 10 oz Salmon Fillet, diced
  • 20 Asparagus Spears, cut to half
  • 3 Tbsp. sliced Green Olives (#330080)
  • 1 Tbsp. Capers (#361100)
  • 2-½ cups Tomato Sauce (#400850)
  • 75 ml dry White Wine
  • 1 Tbsp. chopped Parsley (#450325)
  • 1 tsp. Garlic, minced (#360190)
  • 3 Tbsp. EV Olive Oil (#280395)
  • Salt & Pepper to taste (#110610 & 450440)

Directions:

  1. In a large skillet, heat the olive oil and saute the asparagus, garlic and olives.
  2. When the salmon cubes are half cooked, deglaze with white wine.  Cook for 2 minutes more and add the tomato sauce, capers and chopped parsley.  Reduce the sauce slightly.
  3. Cook the farfalle according to the package directions, strain and toss in the sauce.

Serves 4.
