Ted’s Low Fat Classic Pizza

Ingredients:

  • 1 pound oven roasted Eggplant – no oil (#361456)
  • 3 Tbsp Capers (#361100)
  • 3 Tbsp Greek olives (#330181)
  • 1 Tbsp Balsamic Vinegar (#280200)
  • 1/4 tsp Black Pepper (#450441)
  • 1/2 tsp fresh Garlic (#340051)
  • 1/2 tsp Crushed Red Pepper (#450242)
  • 4 oz Fat Free Cheese
  • 4 oz Non-Dairy Mozzarella
  • 1 cup cooked Asparagus
  • 3/4 cup Roasted Red Pepper (#360170)
  • 1/2 cup Walnuts (#361413)

Directions:

  1. Take your standard dough (see Whole Wheat Dough Suggestions in our Tips section) and roll it out.  Mixed the cooked eggplant with the spices, peppers, capers and olives.
  2. Spread the mixture on the crust.  Sprinkle the shredded cheeses and top with the asparagus, peppers and walnuts.
