Grilled Pizza with Spicy Hummus, Veggies, Goat Cheese & Black Olives

Ingredients:

Spicy Hummus:

  • 3 cups cooked Chickpeas, from dried or canned, drained and rinsed
  • 6 cloves roasted Garlic (#340051)
  • 2 tsp. Cayenne Pepper (#450418)
  • 2 Tbsp. Lemon Juice (#1001492)
  • 2 Tbsp. Honey (#110680)
  • 2 Tbsp. Tahini
  • 1/2 cup Olive Oil (#280390)
  • Salt (#110600)
  • Freshly Ground Black Pepper (#450440)

Pizza

  • 1/2 Pizza Dough, rolled into 2 (10-inch) rounds, recipe follows
  • Canola Oil (#281150)
  • 2 grilled Red Peppers, cut into strips
  • 6 grilled Scallions
  • 1 Japanese Eggplant, cut in 1/2 and grilled
  • 1 Zucchini, cut in 1/2 and grilled
  • Salt (#110600)
  • Freshly Ground Black Pepper (#450440)
  • 1 Tbsp. Ancho Powder
  • 1/2 cup crumbled Goat Cheese (#192401)
  • 1/4 cup chopped Black Kalamata Olives (#330196)
  • 1/4 cup freshly chopped Basil Leaves (#340202)

 Directions:

  1. For the hummus: Place chickpeas, garlic, cayenne pepper, lemon juice, honey and tahini in a food processor and process until smooth.  With the machine running, slowly add the olive oil until emulsified.  Season with salt and pepper to taste.
  2. For the pizza: Heat the grill to high.  Brush both sides of the pizzas with oil and season with salt and pepper.  Grilled until golden brown on both sides, about 2 minutes per side.
